Tasty, simple and delicious while keeping your dishes to a minimum! That’s what’s being served up today. This one tray Turmeric Chicken is easy to prepare and if you double up on your marinated chicken you even have a meal for later in the week. Once marinated the chicken can be grilled, baked or BBQ’d, so it’s super versatile and the flavours can be tweaked to suit your family's tastes. Leave out the chilli, add more or change up the spice mix using what’s in the pantry. Serve up this tray bake with a fresh cucumber salad and grill roti straight from the freezer! Enjoy.
Add all marinade ingredients to a medium size bowl and combine.
Add chicken thighs and toss to coat.
Cover and marinate in the refrigerator for 30 mins or overnight.
Preheat the oven to 200°C fan force.
Oil the base of your tray lightly.
Add rice and spring onions and toss.
Dot with butter or ghee.
Gently pour over the stock.
Top with the chicken thighs.
Seal with foil.
Bake for 25 mins.
Remove the foil and finish the chicken under the grill at 220°C for 5 mins or until the chicken is golden and cooked through.
Season with salt and squeeze over the lemon juice.
Finish with a fresh cucumber and mint salad and pan fried roti.
