Spiced Self-Saucing Date and Walnut Pudding

Serves 12 | Prep Time 20 mins | Cook Time 45 mins+ | Cook Style  Oven | Skill Level Easy


Ingredients (all available at Galleria Shopping Centre)

  • 150g walnuts, toasted for 8 mins, then roughly chopped
  • 200g dark brown sugar 
  • 350g Self Raising flour 
  • Pinch of salt
  • 250ml milk 
  • 2 large eggs 
  • 2 tsp vanilla extract
  • 100g butter 
  • 400g chopped dates 

For the Sauce

  • 300g dark brown sugar
  • 4 tsp cinnamon
  • 4 tsp ginger
  • 150g butter, in little blobs
  • 600ml boiling water


  • Pre-heat oven to 190°C.
  • Butter a baking dish (43 x 23 x 6.5 cm)
  • For the Pudding

-Combine the dark brown sugar with the flour and salt in a mixing bowl.

-Combine the milk egg, vanilla and melted butter in another small bowl and whisk to combine then pour this over the flour and sugar and fold through to combine.

-Add the chopped dates and walnuts and stir through gently and evenly.

-Add the mixture to your buttered dish and even it out.

  • For the Sauce

-Sprinkle the mixture of the remaining brown sugar and spices evenly across the pudding, dot with the butter and pour over the boiling water then transfer to the oven.

-Allow 45 minutes for cooking. It should be springy and spongy when done and the spices, sugar, butter and water will have formed a delicious spiced caramel.

-Serve immediately with cream or vanilla ice cream.

Cook’s Notes

Halve the ingredients for a single family size pudding and use the larger size for entertaining.

Always store nuts in the refrigerator to prevent spoiling. They will stay fresh much longer.

A pinch of salt will bring your pudding flavour to life.

I look forward to pudding season every year. Pudding’s just aren’t the same unless it’s chilly outside and you need to be warmed from the inside out. Self-saucing puddings are a favourite of mine. Mum used to make an amazing chocolate self-saucing pud so they bring back all the lovely childhood feels. This pudding recipe is enough to feed a small army so feel free to halve the ingredients and make one appropriate for a single family dinner, or you could just pack some in lunchboxes for a few days to follow. Enjoy the richness of the dates, the crunch of the toasted walnuts and the delightful spiced caramel sauce.
