As a Mum of three teenagers, I can honestly say that a little spoiling is all we are looking for on Sunday the 8th of May. Start the day right by letting Mum stay tucked up in bed, deliver a beautiful breakfast tray and shower her with love and affection. These recipes for Wam Vanilla Chia Pudding and Smoked Salmon Toast are simple yet decadent. Serve them up on a tray with her favourite coffee or tea, a magazine and seasonal fruit and Mum will be feeling, seeing and eating the love.

~ Warm Vanilla Chia Pudding with Stewed Rhubarb || Makes 2-3 Pudding
Ingredients
1) Stewed Rhubarb
5 fat stalks rhubarb, washed, trimmed and chopped into 5cm pieces (Morley Fresh)
⅓ cup caster sugar (Woolworths or Coles)
⅓ cup water
2) Warm Chia Pudding
All ingredients available from Woolworths or Coles
2 ½ cups milk of choice (use nut, oat or coconut mylk for a vegan pudding)
1 tsp vanilla extract
4 Tbsp maple syrup (or to taste)
½ Tbsp cinnamon
½ cup white chia seeds
Garnish with chopped pistachio, desiccated coconut and fresh or frozen raspberries
Method
1) Rhubarb
Place all ingredients in a saucepan over medium high heat and bring to a boil.
Lower heat to a simmer, cover with a tight fitting lid and cook until the rhubarb begins to soften (about 10 mins).
Set aside.
2) Warm Chia Pudding
In a small pot add the milk, vanilla, maple syrup, cinnamon, and chia seeds and whisk vigorously to combine
Place pot on the stovetop over medium-high heat and stir continuously to warm throughout and thicken into a thin pudding consistency. (5 mins)
Set aside with a lid on.
To serve
You can simply serve the chia pudding in a bowl topped with rhubarb and pistachio however, I chose to layer mine into glasses to make it a bit more Mother’s Day special.
Layer your glass in quarters repeating ¼ glass of chia, ¼ rhubarb at a time then finish with pistachio and coconut.****
~ Smoked Salmon Avocado Toast || Makes: 1 serve
Ingredients
1 thick slice of Cape Seed Loaf from Bakers Delight, toasted
50g Huon Smoked Salmon (Woolworths)
½ a small Shepherd Avocado sliced (Morley Fresh)
2 Tbsp spreadable cream cheese (Woolworths)
2 Tbsp Rozas nut free Pesto (Woolworths)****
Method
Using your toast as the base, spread it with the cream cheese.
Lay on the sliced avocado then fold on the smoked salmon.
Finish with a drizzle of pesto.

Cook’s Notes
You can serve your chia pudding warm or cold.
Change up the fruit. Try stewed apple or pear through winter and fresh berries in summer and spring.
Chia pudding is a great breakfast to pre prepare and grab when you’re running out the door early in the morning.****
