Fill hungry tummies with good food in a flash by layering gluten free corn tortillas with fresh pineapple, pulled pork
and slaw, using short cuts from our friends at Woolies. Send the kids outside with a platter of soft tacos and let
them use their hands!
To make the avocado dressing, combine the flesh of a whole avocado with the juice of two limes, 2 tbsp sour cream, ½ cup chopped coriander and one spring onion sliced in a food processor or blender and blend to a smooth finish. Season with salt to taste.
Place the pulled pork in a pan over medium heat and stir through the Mexican spice paste. Cook for a few minutes until the meat has heated through then set aside. You could also microwave the pork to heat, simply follow packet directions.
Toss the coleslaw and remaining coriander in a bowl with the juice of half a lime and a pinch of salt. Set aside.
Heat the soft tacos to packet instructions.
You can lay all ingredients out in bowls and allow the kids to make their own tacos, or place your corn tortillas on a large platter and pile with pork, pineapple, slaw and avocado dressing. Serve with extra sour cream on the side.
