When oranges are in season I always keep this gorgeous Marmalade and Almond Cake on high rotation in my house. It’s both gluten and dairy free! Perfect for anyone with dietary intolerance’s. The great thing about this cake, along with the moist crumb and sticky almond top, is that it uses two whole oranges, skin and all, to deliver a huge citrus kick so there is no wasting any of the fruit.



  • 1/2 jar quality marmalade, warmed in the microwave for 30 seconds - Woolworths, Aldi or Coles
  • 1/2 cup flaked almonds- Woolworths, Aldi or Coles
  • 2 whole oranges, boiled 1.5 hours, drained and processed- Morley Fresh
  • 1.5 cups sugar- Woolworths, Aldi or Coles
  • 5 eggs, whisked- Woolworths, Aldi or Coles
  • 2.5 cups almond meal - Woolworths, Aldi or Coles
  • 1.5 tsp baking powder- Woolworths, Aldi or Coles


  • Preheat oven to 170°C.
  • Line a 20cm cake tin.
  • Sprinkle flaked almonds evenly across the base .
  • Spread warmed marmalade on base.
  • In a medium mixing bowl, whisk together the sugar and eggs.
  • Add all remaining ingredients and stir until combined.
  • Add cake batter to the cake tin, gently even out the top and bake for 45 mins to 1 hour or until a skewer comes out clean.
  • Rest for 10 mins in the tin, before turning out upside down onto a serving plate.
  • Remove baking paper and enjoy.

Cook’s Notes

  • Gluten free, dairy free.
  • If you don’t require a gluten free cake you can supplement 1 cup of almond meal for 1 cup of self raising flour for a lighter cake.
  • Use a side plate on top of the oranges in the saucepan while boiling to keep them below the water's surface.
  • Decorate your cake with fresh slices of orange for a colour pop.
