Craving a home cooked & nutritious hot lunch?

We’ve tipped over into the “hot lunches” months Mums and Dads. I guess we can all be pleased that there is a world of warm food options that your kids, and you, may be happy to have as a change to the old sambo and fruit combination.

Below I’m sharing three very quick ways to serve up a warm, nutritious lunch to your family if you can’t get away with simply reheating last night’s dinner. There are three pantry staples I am never without which help shortcut to these yummy thermos meals. Miso Paste, which is fabulous for all manner of uses, but especially for whipping up a soup base in an instant; Baked Beans, full of fibre and protein and easy to mix with other ingredients; and a good Bone Broth Powder, which can be a little expensive, but a tin of powder goes a long way.

Not only does bone broth make a delicious soup base, it is packed full of vitamins and minerals as well as tummy healing collagen and gelatin which are rich in amino acids, critical for reducing inflammation.

What should you look for in a thermos?

  • A wide mouth so you can fill the vessel easily.
  • Choose Stainless Steel interior as it’s strong and corrosion proof.
  • A screw cap is the best option for a water tight seal.

Each of the ideas below is for one serve. | Feel free to adjust ingredient amounts as best suits.

1) Miso Noodle Soup

Ingredients

  • 1 tbsp white miso paste mixed with 180ml boiling water
  • ½ cup pre-cooked noodles of choice (wheat, rice or soba)
  • ¼ cup frozen peas
  • ¼ cup frozen corn
  • ¼ cup spring onion, finely sliced
  • You could also use finely sliced vegetables, cubes of tofu, cooked or pork chicken mince and so many other items you may have in the fridge or pantry.

Method:

  • Combine the miso and boiling water and stir well to combine.
  • Layer the ingredients into your thermos, cover with boiling water to heat then drain the water out leaving the ingredients in the thermos.
  • Top ingredients with boiling miso soup and close the thermos.

2) Chicken, Rice and Veggies

Ingredients:

  • 1 tbsp chicken bone broth mixed as per packet direction
  • ½ cup cooked rice
  • ½ cup leftover roast chook, roughly torn
  • ¼ cup grated carrot
  • ¼ cup celery, finely chopped
  • Play around with adding a teaspoon of pesto, choose your favourite chopped vegetables and substitute the rice for pasta, couscous or quinoa.

Method:

  • Combine the bone broth powder and boiling water and stir well to combine.
  • Layer the ingredients into your thermos, cover with boiling water to heat then drain the water out leaving the ingredients in the thermos.
  • Top ingredients with boiling chicken broth and close the thermos.****

3) Cheesy Beans and Greens

Ingredients:

  • 1 small tin baked beans
  • ½ cup roast sweet potato
  • ½ cup chopped baby spinach
  • ¼ cup grated cheese
  • You could also try adding bacon or ham, chopped boiled egg, cooked sausages sliced, cherry tomatoes halved..the list goes on.

Method:

  • Heat the baked beans and sweet potato in a small bowl in the microwave.
  • Place them in the thermos and top with chopped spinach then cheese and close the thermos.

Tips

  • Always pre-heat your thermos with boiling water before emptying and filling with the hot lunch.
  • For the two soup dishes, place the noodle rice and vegetable components into your thermos, cover in boiling water to heat, drain and return to the thermos then top with the hot liquid. This will help retain the meal’s heat by pre-warming the ingredients.
